An Update

Hey everyone!

I know I have been missing in action from the blogosphere and haven't posted anything in months and I do apologize for that. Thanks for all the thoughtful comments and emails during this time. I truly have the best readers ever :D

I have so many cake creations and ideas that I am dying to share with all of you but it seems that would have to wait until after the baby comes. Yes!!!!! Hubby and I are expecting our first baby in a few months and we are very excited! However, my nausea and morning sickness has been dragging on for so long and it's just brutal...I feel sick all the time and don't have the energy to do much...sighs :(

 



Anywho, enough with my complaining. Stay safe everyone and I miss you...

Chocolate thumbprint cookies

Thumbprint cookies… considered to be one of those classic cookies  just like sugar cookies or shortbread cookies but shockingly enough, I had never tried making them. So, off I went into the kitchen to make my first batch Open-mouthed smile

And what a successful batch it was!

I swear it took every ounce of strength I had to stop myself from eating these cookies while taking pictures…lol.

The chocolaty aroma, the crispy, crunchy texture combined with all sorts of yummy fillings was killing me…hahaha

I have seen these cookies filled with a wide range of things from jams to nuts to creams. With so many  exciting options,  I couldn’t just pick one. So, I filled each cookie with something different…

Peanuts

Pretzels

Cashews

Almonds

Crushed rock candies

M&M candies

Sprinkles

Dried cranberries

Raisins

Trust me… if I could have found any more filling ideas in my kitchen, they would have also made it into these cookies…lol Smile with tongue out

What flavor combination do you think will be your favorite?

My favorite combination was the cranberry filled ones. I had presumed that would be the worst but the tangy and sweet flavor of cranberries complimented the chocolate cookies very well.

I am already imagining how good a cake with those flavors would taste…. mmmmmmm!

BTW, these cookies were a delight to photograph! I kept arranging them in all sorts of fun ways.

First, I ended up with a pretty flower and then I made a triangle or so I thought until my husband said: “It looks like the billiard ball arrangement.”  That’s so true! hehe.

And then, I made cookie clusters which look like diamonds or kites (maybe??? lol)…

To make these cookies, you will need to follow these steps:

Step 1:
Prepare your chocolate cookie dough, using the recipe I posted HERE

Step 2:
Pull out small portions of the dough and make little balls. Place them on a cookie tray lined with parchment paper.

Step 3: 
Press your thumb (or any finger you like) into the center of the cookie dough balls. You will end up with a depression in the middle.

Step 4:
Bake these cookies  for about 10-12 minutes at 375 degrees.

Step 5:
When you take these cookies out of the oven, you will notice the depressions won’t be as deep as you had made. To fix that….

…press the end of a wooden spoon  into those holes until they are deep again. Do this before your cookies have a chance to cool down completely.

Step 6:
Now, melt some chocolate in a squeeze bottle and prepare a plate with all your fillings (peanuts,pretzels,cashews,almonds,crushed rock candies,M&M candies,sprinkles,dried cranberries and raisins).

Step 7:
Pour some chocolate into the cookie depression.

Step 8:
While it’s still wet, add your filling like I added pretzels in this picture. Let the cookies sit at room temperature for 15 minutes and the chocolate will firm up.

And that’s it…you are done!

As soon as I dunked one of these babies into my glass of milk, I was in heaven!

Go ahead and bake yourself a batch and eat away this weekend… nibble nibble … Smile
