Abstract polka dot cake

Since half my wardrobe is filled with polka dot designs, it was only a matter of time before polka dots ended up on one of my cakes….lol. But,  polka dots are usually associated with baby cakes and I didn’t want to make a“cutesy” cake. So, I made an abstract polka dot cake and I think it looks more sophisticated.

Most tiered cakes start off with a big cake as the base and the cakes gradually get smaller as you go up. I wanted to do the opposite and make it upside down.

I think it’s rarely done coz so far, I have only seen such a cake ONCE and it was in some bridal magazine  (I don’t remember which one Confused smile). I don’t even remember the design. The only thing I remember is admiring its upside down shape and thinking: “Good Lord! That is crazy cool!” haha

Now, I am curious. Have any of you ever seen an upside down tiered cake? Did any of you order them for your weddings or anniversaries?

For the polka dot decorations on this cake, this is what you need to do:

Step 1:
Roll out turquoise colored fondant. Use a large circle cutter to make a circle cut-out.

Step 2:
Position a medium circle cutter a little farther away from the center of the circle you just made. Then, press the cutter and remove this piece. You will end up with a hollow circle.

Step 3:
Follow steps 1 and 2 again and cut out some regular polka dots and some hollow polka dots in various sizes using big,medium and small circle cutters.

Follow steps 1 and 2 again to make dark blue polka dot cut-outs too.

Let these cut-outs dry for 24 hours. They won’t become very stiff but they should be able to hold their shape without bending over.

Step 4:
Brush some water on the back of these cut-outs.

Step 5:
Now, just  paste those fondant circles onto your cake.

Before doing this, make sure your cakes are already covered in fondant and stacked with plastic pipe supports in between each tier.  Also, each tier should be resting on a cake board.

And you are done! Smile

I have  been decorating cakes for about 1 year now and every time, I make a cake, I learn something I didn’t know. This cake was probably the one where I learnt a lot:

1) Support is the most important thing in such a cake! I was worried that  the whole cake would topple over if I used wooden dowels or bubble tea straws. So,I went to Home Depot and picked up some of these plastic pipes and used those for support. Gotta thank Buddy from Cake Boss for that tip (I love that show!!!)

2) Use a very sturdy cake board for each tier to rest on. I covered that in fondant too and wrapped a ribbon around it.

3) Rolling out thin fondant to cover a cake makes the edges of a square cake look sharper. Thicker fondant make the edges look rounder.

4) Ice your cake very smoothly with no crumbs and bumps and the cake would look smoother when you cover it in fondant.

5) Don’t be scared to start all over if you are not happy with it. I did my top tier twice coz I was not satisfied and I had to re-do my middle tier once as well.

6) Doing a round version of this cake would be much easier since square cakes are not my greatest strength and they take me twice as long to complete.

Another stunning cake - those polka dots are gorgeous and as you've demonstrated, so simple to make, but so effective.

Any tips for a three-tier wedding cake - the base is fruitcake and the top two layers will be sponge so there may be issues with stability. I was going to use flower-covered polystyrene layers in between but your advice and opinion would be appreciated on whether these would need support or not.

Hey Hester!

That sounds like such a tasty wedding cake. I have never done a wedding cake but anytime I do tiered cakes,  I ALWAYS use support. This way, you could be at ease and not have to continue worrying about the tiers digging into eachother or falling over e.t.c.

I am not sure what polysterene layers are. Are they similar to pipes? Or are they  thick cake boards?

What I would suggest is make sure your cakes are sitting on a cake board and then push thin plastic pipes or wooden dowels into each cake (you may have to cut the pipes or dowels to match the height of your cake) .  Then, when you reach the venue, you can just stack the cakes on top of each other and pipe a border at the base of each tier or tie a ribbon around the base of each tier to give it a more polished look.

You're right. That is one crazy cool cake. I love the upside down tier. I've never seen it before. We had cheesecake at our wedding so there was only a main one-tier cake and then several small single cakes surrounding it. I love yours with all the dots though. Fantastic, inspired piece.
